Know Your Flour: What White Flour Is Missing
…and where to find it.
As part of my residency at The Gourmandise School, I had the chance to look past a product we all take for granted—flour—and learn deliberately about the raw ingredient it actually comes from: wheat. It was there that I came to understand that flour isn't just a blank white powder; it is the direct result of how we treat the wheat berry during the milling process. My time there opened my eyes to the incredible range of grains and flours that have existed across regions and eras, and how each is meant to be used. At first, the sheer volume of food history and science was overwhelming. But it quickly turned into an inspiration to pull back the curtain on this deeply misunderstood staple. What starts as a lesson about a simple baking grain ultimately rewrites how you look at almost every pre-made product on the grocery store shelf.
Let's start with the core of the ingredient itself — wheat — and what's worth understanding about it. Every grain of wheat has three essential parts: the bran, the germ, and the endosperm. Milling is simply how that grain is crushed and turned into flour, and depending on how it's done, you end up with one of two very different products: refined, or unrefined. - Unrefined (whole grain) — the whole seed. It keeps the bran, germ, and endosperm intact, so you get all the natural fiber, B vitamins, and healthy fats the grain was meant to carry.
- Refined (white flour) — the stripped core. Milling peels away the fibrous bran and discards the nutrient-rich germ, leaving just the starchy center — which means most of the real nutrition is thrown out with it.
So the difference between refined and unrefined flour isn't a small one — it's a fundamental difference in what you're feeding your body. And it's important to understand that this choice has largely been made for us. Nearly everything on standard grocery shelves — sandwich breads, burger buns, wraps, and all-purpose pantry flours — is refined by default. Industrial mills use a process called enrichment to synthetically add iron and a few B vitamins back into white flour — but that's only part of the story.
So the difference between refined and unrefined flour isn't a small one — it's a fundamental difference in what you're feeding your body. And it's important to understand that this choice has largely been made for us. None of this makes white flour the enemy — that was never the point. It's reliable, inexpensive, and often exactly the right tool for what you're making. The real point is to break the illusion of choice. Right now, the average shopper defaults to refined ingredients without meaning to, simply because they're hiding everywhere — in the everyday sandwich breads, wraps, buns, and packaged foods we reach for without thinking. Understanding the full scope of an ingredient, and how it's treated, is genuinely valuable knowledge to hold. It moves you from passively consuming to intentionally deciding.
